Easter Egg Nests

Serves: ~10 nests

Ingredients:

20 small easter eggs, melted

1 Tbs nut butter

1 tsp olive oil

1/2 cup rice bubbles

1/2 C soy protein crisps

1/2 C All Bran

1/4 C coconut flakes

Optional: top with a speckled egg or easter egg

Methods:

  1. Melt choc and mix though the nut butter and oil until smooth.

  2. Add remanding ingredients and mix through.

  3. Evenly divide into silicon muffin cases or oiled muffin tins.

  4. Add speckled eggs and refrigerate until set.

Tips:

  • You can find soy protein crisps these at Coles in the Health food aisle - or you can use another 1/2C rice bubbles
