Gluten Free Banana & Almond Butter Muffins 

Serves: ~11 Muffins

Ingredients:

Wet:

• 2x bananas, mashed

• 1 egg

• 1/4C maple syrup 

• 1/2C almond butter 

• 1/2C natural yoghurt 

• 1tsp vanilla essence 

• 1tsp cinnamon

Dry:

• 1.5C gluten free plain flour 

• 1C almond meal 

• 1tsp baking powder 

• 1/2tsp bicarb soda 

Method:

  1. Preheat oven to 180 and prepare muffin tin.

  2. In a large bowl, combine all wet ingredients.

  3. Add dry ingredients into the wet and stir to combine well.

  4. Evenly distribute mixture between the muffin holes.

  5. Bake in oven for ~20 minutes.

Notes:

  • Use regular plain flour if you are not gluten free.

  • Add some choc chips for extra flavour.
