Gluten Free Banana & Almond Butter Muffins
Serves: ~11 Muffins
Ingredients:
Wet:
• 2x bananas, mashed
• 1 egg
• 1/4C maple syrup
• 1/2C almond butter
• 1/2C natural yoghurt
• 1tsp vanilla essence
• 1tsp cinnamon
Dry:
• 1.5C gluten free plain flour
• 1C almond meal
• 1tsp baking powder
• 1/2tsp bicarb soda
Method:
Preheat oven to 180 and prepare muffin tin.
In a large bowl, combine all wet ingredients.
Add dry ingredients into the wet and stir to combine well.
Evenly distribute mixture between the muffin holes.
Bake in oven for ~20 minutes.
Notes:
Use regular plain flour if you are not gluten free.
Add some choc chips for extra flavour.
