Rainbow Bean Salad
Serves: 1
Ingredients:
1x 125g can four beans, drained and rinsed
1x 125g can edamame beans, drained
75g canned beetroot, sliced finely
½ medium tomato, diced
⅓ Lebanese cucumber, diced
50g dry classic shredded coleslaw
50g leafy mixed greens
¼ medium avocado, diced
Dressing:
1 tbs hummus
½ fresh lemon, juiced
¼ tsp pepper
Method
In a large bowl, combine all salad ingredients.
In a small bowl, combine dressing ingredients together.
Top salad with dressing, mix together and enjoy.
