Rainbow Bean Salad

Serves: 1

Ingredients:

  • 1x 125g can four beans, drained and rinsed

  • 1x 125g can edamame beans, drained

  • 75g canned beetroot, sliced finely

  • ½ medium tomato, diced

  • ⅓ Lebanese cucumber, diced

  • 50g dry classic shredded coleslaw

  • 50g leafy mixed greens

  • ¼ medium avocado, diced

Dressing: 

  • 1 tbs hummus 

  • ½ fresh lemon, juiced

  • ¼ tsp pepper

Method

  1. In a large bowl, combine all salad ingredients.

  2. In a small bowl, combine dressing ingredients together.

  3. Top salad with dressing, mix together and enjoy.
