Bean Shakshuka

Serves: 1

Ingredients:

  • 1 tsp olive oil

  • 2x small mushrooms, sliced

  • 1/4 red capsicum, sliced

  • Small handful of baby spinach

  • 1 tsp dried herbs

  • 1/4 tsp of garlic powder

  • Crack of pepper

  • 1x small can of baked beans

  • 1 whole egg

Toppings:

  • 1/4 avocado, smashed

  • 1 Tbs natural yoghurt

  • 1 slice of wholegrain toast or sourdough

Methods:

  1. In a small preheated frypan, add oil, veggies and herbs and cook until soft and fragrant.

  2. Add baked beans and cook for a further minute.

  3. Make a well in the middle and crack the egg in the middle. Cover frypan with a lid until egg is cooked to your liking.

  4. Once cooked, remove from heat and add your toppings.
