Bean Shakshuka
Serves: 1
Ingredients:
1 tsp olive oil
2x small mushrooms, sliced
1/4 red capsicum, sliced
Small handful of baby spinach
1 tsp dried herbs
1/4 tsp of garlic powder
Crack of pepper
1x small can of baked beans
1 whole egg
Toppings:
1/4 avocado, smashed
1 Tbs natural yoghurt
1 slice of wholegrain toast or sourdough
Methods:
In a small preheated frypan, add oil, veggies and herbs and cook until soft and fragrant.
Add baked beans and cook for a further minute.
Make a well in the middle and crack the egg in the middle. Cover frypan with a lid until egg is cooked to your liking.
Once cooked, remove from heat and add your toppings.
