Black Bean Brownie

Serves: 8

Ingredients:

  • 1 can black beans, rinsed and drained

Wet Ingredients:

  • 1 egg

  •  ¼ C olive oil

  • 1 tsp vanilla essence

Dry Ingredients:

  • 2 Tbs cocoa powder

  • 1/3 C brown sugar

  • 1 C wholemeal flour

  • 1 tsp baking powder

  • 1/3 C choc chips

  •  ½ C raspberries

Topping:

  •  ¼ C chopped pistachios

Method:

  1. Preheat oven to 180°C and line a slice tin with baking paper.

  2. Blend beans in a food processor (you can also mash them).

  3. Combine wet ingredients into a large bowl and add in the mashed beans. 

  4. Add dry ingredients (except choc chips and raspberries) into wet ingredients and stir to combine.

  5. Fold through the choc chips and raspberries.

  6. Pour into lined baking tin and top with pistachios.

  7. Bake for approx. 25 minutes.

  8. Let cool, cut and enjoy!
